The shortcut, which will also give you the Minekarting trophy or achievement depending on your platform, is one of the easiest to access, it just requiring you to take a sharp right turn early on in a lap and also avoid getting squashed by the mining kart.

Remember: You need to get through the tunnel and to the other side without getting flattened, otherwise the trophy or achievement will not pop.
